Today, as usual we started at 8 A.M. We oneline, then Mr. Jaya came and
explained about the menu for today. Today we prepared Celebes Buffet, which are:
Peco Doang
Jalangkote

Sop Saudara
Labu Santan

Nasi Putih
Konro Bakar
Lawar Pakis
Pallu Ce’la

Pisang Ijo
Cucur Bayao
Then
supervisor divided us into new group because last week some of us were in
Gammara Hotel, including me. I was in group 2, and my group will handle
appetizer for this 1 week. The appetizer we prepared today were peco doang and
jalangkote. We also helped main course group to make acar as the condiment.
First, we took the ingredients for jalangkote and acar. We took carrot, potato,
rice noodles, and boiled eggs that were sauté together with shallots and garlic
and seasoned with salt and pepper.
Next, the ingredients for acar : carrot and
zucchini,usually we used cucumber but there were no cucumber, so we used
zucchini.
Done preparing for jalangkote and acar. We prepared for peco doang. First,
we asked butcher to thawing shrimp and peeled the skin. Next, we made the spice
paste, from large red chillies, bird’s eye chillies, candlenuts, and salt for
seasoning. We roasted the large red chillies, bird’s eye chillies, and
candlenuts. Then, blended using food processor. Last, we added a pinch of salt.
After that, we wrapped the peeled shrimp, and peco doang paste and keep it in
chiller.
Next, we fried the jalangkote but not until cooked, only half-cooked.
While
we fried the jalangkote, the other group took a rest. Finished frying the
jalangkote, other group has finished rest as well so we didn’t get the chance
to take a rest. We oneline and we got punishment, because a lot of us didn’t
bring their toolbag, so we had to eat like half onion. After that, we started
general cleaning. 7 P.M. we oneline and there were few announcement from Mr.
Ical and we may go home.
