Today I came 7 A.M. because yesterday Mr. Ical asked me and one of my
friend to come earlier to took all the preparation that we’ve prepared
yesterday from chiller and freezer. 6.45 A.M. I was already in campus then I
went to chiller and freezer, checked all the preparation and took it into
kitchen. Then I waited until 8 A.M. and we oneline. Before we started,
supervisor checked our toolbag, and today all of our toolbag has completed, so
we could entered the kitchen and oneline. Then, Mr. Ical came and he explained
a little about European Buffet for today, and Indonesia Buffet for tomorrow.
For today’s appetizer, there were macedoine of vegetable with mayonnaise,
jelly fruit salad, monte cristo, and club sandwich. For macedoine of vegetable
with mayonnaise, we’ve prepared the mayonnaise and we’ve cut the vegetables
into macedoine yesterday. So, for today we just blanched the vegetables and
toast with mayonnaise and seasoning with salt and pepper. Next, for jelly fruit
salad we’ve made the fruit jelly yesterday, so we just toast with whipped cream
that was made by pastry section. Then, for monte cristo and club sandwich we’ve
prepared the bread yesterday, and for the fillings there were bacon, smoked
beef, and chicken breast. First, we thawing the smoked beef, bacon, and chicken
breast. Next, we pan-fried. Then, we roasted the bread. After that, we made the
monte cristo. Put the bread and put the chicken breast, smoked beef, cheese,
and another bread. Then, put into mixed eggs with milk and flour and fried.
Next, we made the club sandwich. Put the bread spread with mayonnaise, then put
the lettuce, tomato, 2 strips of bacon, another bread, chicken breast, lettuce,
and another bread. 12 A.M. we’ve finished and we served the food to restaurant.

After that, we started prepare for Indonesia Buffet, which are :

And my team
handled the appetizer again, dojang nakeng and rujak mie. I never made this
appetizer before, so to be honest I’m kinda confused. But luckily my friend
would like to help me to make the rujak mie, so I just had to prepare for
dojang nakeng. But I couldn’t prepare really well cause a lot of ingredients
weren’t available, so we just thawing the grated coconut and fish stock.
Finished preparing we started general cleaning right away. 7 P.M. we oneline
and there were few information from Mr. Ical then we may go home.
