Daily Report : Serving Celebes Buffet (English Ver.)


September 4th 2018
Today we served Celebes Buffet and prepared for European Buffet. We started at 8 A.M. First, we oneline and Mr. Ical came and explained a little about celebes buffet. after that, we started doing right away. My group took the preparation that we’ve prepared yesterday: peeled shrimp, spice paste, and half-cooked jalangkote. First, we sauté the tomato, then sauté the shrimp. Next, we smashed the tomato and mixed it together with shrimp. Last, mixed in the spice paste into the shrimp and seasoned with lime, salt, pepper, and basil.Next, we fried the half-cooked jalangkote and made the sambal. After that, we served the food from kitchen to restaurant.

Then, we cleaned the kitchen before we started prepare for European Buffet, which are :
Macedoine of Vegetable with Mayonnaise

Spitzle

Vegetable Tagliatelle

Monte Christo

Club Sandwich

Finished cleaning, we started prepare but before that, we oneline first and supervisor explained a little about the european buffet. 
As I said before, my team will handle appetizer for this 1 week. So, for today, my team prepared macedoine of vegetable with mayonnaise and monte cristo and club sandwich. But, since the bread was made by bakery today, so we’ll do the monte cristo and club sandwich tomorrow. First, we took the ingredients for macedoine of vegetable: carrot, turnip, long beans and cut it into macedoine. 


After that, we prepared the ingredients for jelly fruit salad: grape, pineapple, orange and cut it. 


Then, we made the jelly. 


Next, we pour the jelly half the mould and pour the fruit then covered it again with jelly. Cool it down. 


Last, we put all our preparation in chiller. Finished preparing, we started general cleaning right away. 7 P.M. we oneline and there were few information from Mr. Ical and then we may go home.
