As usual we started at 8 A.M. Before we start, we took out the ingredients
that we’ve had prepared yesterday from chiller. Yesterday we’ve prepared for
celebes buffet, which are :

konro bakar
lawa pakis
kerupuk, acar, sambal

And my group
handled the soup (sop saudara and labu santan). Yesterday we’ve prepared the
spice paste for sop saudara and the white paste, and pumpkin for labu santan.
Then we oneline and Mr. Ical came and he asked about preparation and he
reviewed us but many of us couldn’t answer. He was so mad that he gave us
homework. We have to write min. 20 pages about what we’ve learned from the
beginning until pastry. And we have to collect it tomorrow morning at 7 A.M.
When usually we come at 8 A.M. now we have to come before 7 A.M.
After that we started doing right away because we have to finished at 11
A.M. Mr. Ical didn’t want us to repeat the same mistake from these 2 days
before where we were really slow and running out of time. My group boiled the brown
stock and pan fried the beef for sop saudara. Then, we saute the white paste
for labu santan and pour water and coconut milk. After that, the beef was done,
we saute the spice paste for sop saudara and pour it into the brown stock. Next,
we blanched the pumpkin, green beans, and mung beans for labu santan. And pour
it into the labu santan then, we seasoned the labu santan with salt and pepper.
Back to sop saudara, we cut the beef that has been fried and put into the soup,
then we seasoned the sop saudara as well with salt, pepper, and tamarind. And we
also pour milk into the sop saudara.
At 11 A.M. my group has finished the menu, but then Mr. Ical asked us for
perkedel and sambal. We were confused because it didn’t written in the recipe
and we never make this menu before. So, we went to took the ingredients for
perkedel and sambal. We peeled the potatoes for perkedel and cut the potatoes. Then,
we fried the potatoes. After that, put it in a bowl and seasoned with celery,
fried shallots, salt, pepper, and nutmeg. Mix with mixer, and added eggs. Next,
for sambal, it was made from chillies and garlic. Mix with food processor and
then saute.
Around 12 A.M. all the food ready and served into restaurant.

After that,
we took a break and have lunch. Finished lunch, some of us made video for our
LSP that will be collected soon. After making video, we started general
cleaning. At 3.30 P.M. general cleaning finished. At 5 P.M. we oneline and
there were few information from Mr. Jaya. After that, we pray and we may go
home.
