Welcome back again to my blog. It’s been about 2 months since the last time
I updated my blog. Time flies so fast, my holiday is over and now I’m on my 3rd
semester. Today was the first day back again in kitchen. For today, we served
oriental buffet, which are :
Thai beef salad
Chinese spinach and peanut salad

Btw, now every practice week there’ll be 10 of us who will go to “Gammara
Hotel” and practice there. Since there are 40 of us, we were separated into 4 groups
and I am in group 2. And today group 1 go to “Gammara Hotel” for this 1 whole
week. So the rest of us were staying in kitchen. We were separated into 4
groups for doing today. I was in group 4 and for today my group handle the tom
yum goong, pho bo, khau plau, and onigiri.
First, we prepare all the ingredients, thawing the shrimp for tom yum and
the tenderloin for pho bo. After that, we boiled 2 stock pot of water (one for
shrimp stock and one for beef stock). Next, after the shrimp stock was ready
we
strained the stock and put in the chillies, the kaffir lime leaves, and add the
seasoning such as the tom yum paste and salt.
Then, the brown stock boiled as
well, we put in the ingredients such as shalllots, ginger, lemongrass, and
cinnamon stick. Then, we strained the stock and put in the rice and beef and the last add the rice noodles.
At 1 P.M. resto was opened and we served all the food from kitchen to
restaurant.

And after that, we started to prepare for tomorrow. Since for this
week my group will handle the soup, so we prepare the soup for tomorrow which
are shrimp bisque and puree of pumpkin soup. We prepare the shrimp stock and
fish stock for shrimp bisque, and chicken stock and pumpkin for puree of
pumpkin soup. After we finished prepare, we started general cleaning right
away. Finished general cleaning, we waited until 6 P.M. then we oneline and
there were few information from Mr. Jaya. After that, we pray and we may go
home.
