Daily Report (English Ver.)

February 5th 2018


I'm going to share my activity in kitchen for today. So, today we learned about breakfast. We started at 8 A.M. and then Mr. Syahrial, one of the lecture who was in charged for today came and he explained to us about breakfast.
Breakfast start at 06.00 A.M. to 10.00 A.M. 
Classification of breakfast : 
  1. American Breakfast.
  2. Continental Breakfast.
  3. English Breakfast.
  4. Asian / Indonesian Breakfast.  
Breakfast component :
  1. Fruit (slice fruit, juice)
  2. Bread (unrich, rich)
  3. Meat (poultry, lamb, pork, etc.)
  4. Beverage (coffee, tea, milk, etc.)
  5. Cereal (wheat, barley, oats, rice)
  6. Egg (omelette, sunny side up, turn over, poach egg)
  7. Preserve (jam)
After the explanation, we then started to prepare to make Soft Roll and Danish. Because, tomorrow we're going to serve American Breakfast and Continental Breakfast.
The ingredients we need to make Soft Roll :
  1.  Water
  2. Yeast
  3. Hard Flour
  4. Salt 
  5. Sugar
  6. Milk Powder
  7. Shortening
  8. Butter or margarine
How to make Soft Roll :
  1. Straight dough method (mix all the dry ingredients).
  2. Proofing for around 15 minutes.
  3. Scaling (60gr per rolls).
  4. Bake (200O C).
  5. Soft Roll is ready.


The ingredients we need to make Danish :
·         Milk
·         Instant yeast
·         Butter
·         Sugar
·         Salt
·         Eggs
·         Egg yolks
·         Hard flour
·         Soft flour
·         Croissant fat
How to make Danish :
1.      Mix all the dry ingredients except the instant yeast. Instant yeast will be dissolved in milk.
2.      Beat in eggs and egg yolks.
3.      Add the dissolved yeast.
4.      Proofing for around 15 minutes in chiller or freezer.
5.      Roll in remaining butter and give 3 folds. Don’t forget to proofing the dough in chiller or freezer for every fold.
6.      Spread the jam or honey or whatever you like. Roll the dough and cut it and put in on sheet pan.
7.      Bake (190OC).
8.      Danish is ready to serve.



But, for today we didn’t bake the Danish yet because we’re going to bake it tomorrow. So, we keep the dough in chiller.
After we finished prepare for tomorrow, we started general cleaning with semester 4. The general cleaning started around 05.30 P.M. and finished around 7 P.M. Then, we wait for Mr. Ical. He gave us some information about what we gonna do tomorrow and about this blog and the project that we’ll do later. Around 07.15 P.M. we finished, we pray, and we can go home.
So, that is all my daily activity for today.
