Daily Report : Menu Rotasi II.2 (English Ver.)


April 30th 2018
Today, as usual we started at 8 A.M. But, today there were no supervisors cause senior were busy preparing for guests from tourism ministry. So, we oneline in cold kitchen then not long after that Mr. Wawan came in and he have few things he had to tell us about the incident that happened to us last Friday when we were in Toraja. What happened when we were in toraja was, there were few of my friends who were so emotional seeing that our kapros, Mr. Wawan couldn’t come like the other majors and that our performance was not as great as the other majors. But, for me it was so exaggerate that they cried in front of everyone because I believe Mr. Wawan couldn’t come because he has his reason, it wasn’t like that was his intention not to come with us, and about the performance, well I mean our major is busy enough in kitchen, so why would you worry so much about the performance plus it’s not where we’re good at, what you need to worry about is your food taste good or not.
Okay, move on. After Mr. Wawan finished, Mr. Jaya came in and told us that for today we’ll prepare and cook for rotation menu II.2 or Thailand, which are :
1.      Thai beef salad (appetizer)
2.      Gai tod takrai with yam makeua yo and khau plao (main course)
3.      Khao neow ma muany (dessert)
And for today it was group 1 prepare and doing. My team handled the main course. First, we made the gai tod takrai. Thawing the chicken and while we were waiting we prepare the other ingredients such as, lemongrass, garlic, chili, fish sauce, palm sugar, salt and pepper. After the chicken thawing and cut, we marinated it with cornstarch, flour, eggs, fish sauce, salt and pepper, then fry. 


Then, bake the chicken. Last, marinated with the dressing. The dressing was made of hot water mixed with fish sauce, shallots, garlic, ginger, salt and pepper. Finished with gai tod takrai, I helped my friends who were grilling eggplant for the yam makeua yo.



After all the menu finished, we took a break until 03.30 P.M. After break, we started general cleaning right away. General cleaning done, and since today we didn’t open resto, so we had a lot of anak bangsa. Anak bangsa is like the leftover food for us. After that, we oneline and there were few information from Mr. Ical and then we pray and we may go home.

Hari ini, seperti biasa kami mulai jam 8 pagi. Tapi, hari ini tidak ada supervisor karena senior sibuk mempersiapkan makanan untuk tamu dari kementerian pariwisata. Jadi, kami oneline di cold kitchen kemudian tidak lama setelah itu Pak Wawan datang dan dia memiliki beberapa hal yang harus dia ceritakan kepada kami tentang insiden yang terjadi pada kami Jumat lalu ketika kami berada di Toraja. Apa yang terjadi ketika kami berada di Toraja adalah, ada beberapa teman saya yang begitu emosional melihat kapros kami, Pak Wawan tidak bisa datang seperti jurusan lain dan bahwa penampilan kami tidak sehebat jurusan lainnya. Tapi, bagi saya itu sangat berlebihan kalau mereka menangis di depan semua orang karena saya percaya Pak Wawan tidak bisa datang karena dia punya alasan, dan tentang penampilan, yah, jurusan kita cukup sibuk di dapur, jadi mengapa Anda begitu khawatir tentang penampilan yang dimana memang bukan bidang kita, yang perlu Anda cemaskan adalah apakah makanan Anda enak atau tidak.
Oke, lanjutkan. Setelah Bapak Wawan selesai, Pak Jaya masuk dan memberi tahu kami bahwa untuk hari ini kami akan menyiapkan dan memasak untuk menu rotasi II.2 atau Thailand, yang adalah:
1. Thai beef salad (hidangan pembuka)
2. Gai tod takrai dengan yam makeua yo dan khau plao (hidangan utama)
3. Khao neow ma muany (makanan penutup)
Dan untuk hari ini adalah persiapan dan doing kelompok 1. Tim saya menangani hidangan utama. Pertama, kami membuat gai tod takrai. Mencairkan ayam dan sementara kami menunggu kami menyiapkan bahan-bahan lain seperti, serai, bawang putih, cabe, saus ikan, gula aren, garam dan merica. Setelah ayam dicairkan dan dipotong, kami marinate dengan tepung maizena, tepung, telur, kecap ikan, garam dan lada, lalu digoreng. 



Kemudian, panggang ayam. Terakhir, dimarinate dengan saus. Saus itu terbuat dari air panas yang dicampur dengan saus ikan, bawang merah, bawang putih, jahe, garam dan lada. Selesai dengan gai tod takrai, saya membantu teman-teman saya yang memanggang terong untuk yam makeua yo.




Setelah semua menu selesai, kami beristirahat sampai jam 15.30. Setelah istirahat, kami memulai general cleaning segera. General cleaning selesai, dan karena hari ini kami tidak membuka resto, jadi kami punya banyak anak bangsa. Anak bangsa seperti makanan sisa bagi kita. Setelah itu, kami oneline dan ada beberapa informasi dari Pak Ical dan kemudian kami berdoa dan kami dapat pulang.
