Daiky Report : Serving Menu Rotasi II.1 (English Ver.)


April 18th 2018
As usual we started at 8 A.M. we oneline in cold kitchen. While waiting for lecturer, supervisors reviewed us one by one until 10 A.M. Then Chef Dino came and then he asked us about the yesterday’s preparation for rotation menu II.1 (Chinese). Since we haven’t marinated the meat for the beef rice bowl so Chef Dino showed us how to marinate meat especially for Asian Food. 


Next, Chef Dino told us the recipe for the sauce, black pepper sauce. After that, we started doing.
Since yesterday my team handled the beef rice bowl, so we started to make the sauce, rice, and the vegetables. My friend handled the rice and the vegetables and I made the sauce helped by one of my friend from other team. The ingredients for the black pepper sauce are tomato sauce, chili sauce, oyster sauce, chicken powder, msg, black pepper, premium dark soy sauce, water, and flour as thickening agent.

Finished with the sauce, my friend also finished with the rice and vegetables and we waited until 1 P.M.
1 P.M. we started to fry the marinated meat. After that, put aside the fried marinated meat and saute garlic and onion, then put the vegetables in and pour the black pepper sauce, and last put in the fried marinated meat, beef for the beef rice bowl was ready. 


Then back to cold kitchen, my team started plating the beef rice bowl for 40 pax.

2 P.M. resto was opened, the food were served one by one from appetizer to dessert. Around almost 4 P.M. we started general cleaning until 4.30 P.M. Then we took a rest and since it was raining so we had to wait a little bit too long until 6.30 P.M. and we may go home.
