Daily Report : Menu Rotasi II.1 Preparation (English Ver.)


April 2nd 2018
      Today, was the first day of practice week after mid test. As usual, before we started we oneline and supervisors checked our grooming and toolbag. After that, we went in to the kitchen and put our bag in locker then oneline in cold kitchen. While we were waiting for Mr. Syahrial, supervisors reviewed our small book one by one until 11 A.M. but since Mr. Syahrial was busy so supervisors ordered us to started prepare for tomorrow’s menu.
For this week, we’ll serve rotation menu II which is Oriental food. Tomorrow, we’ll serve rotation menu II.1, which are :
1.      Chinese spinach and peanut salad (appetizer)
2.      Traditional egg drop soup (soup)
3.      Beef rice bowl (main course)
4.      Tang yuan and Tang zhong (dessert)
And today group 1 (team 1,3,5,7,9) was in charged for preparing which is also my team. So, supervisors started to split our course, and my team was in charged for traditional egg drop soup. For this course, we prepared the chicken stock and minced chicken. First, we boiled water and blanch the chicken bone, next boiled water in a large stock pot and put in the mirepoix, bouquet garnie, and chicken bone, then we simmer and skimmer the surface. Second, we blanch the chicken meat and minced it, then keep it in a bowl and cover with plastic wrap.

            After that we had to wait for other teams who were still preparing for their course. 


3 P.M. all preparation finished so we were allowed to took a break until 4 P.M. After break, we oneline again in cool kitchen and supervisors checked our preparation. While we were waiting for general cleaning, we played a game with supervisors. 5 P.M. before started general cleaning my team skimmer the chicken stock that we’ve simmered for around 5 hours and keep it in a large stock pot and cover with plastic wrap.

General cleaning started until 6 P.M. We waited until 7.30 P.M. and we oneline again, Mr. Jaya asked us about the preparation and if there was lack of ingredients. After that, we pray and we may go home.
