Daily Report : Menu Rotasi II.3 Preparation (English Ver.)


April 4th 2018
Today, we started at 8 A.M. as usual, before we entered the kitchen we oneline and supervisors checked our grooming and toolbag, after that we oneline in cold kitchen. Then Mr. Syahrial came and explained to us about today’s menu, rotation menu II.2 (Thailand),  which are :
1.      Thai beef salad (appetizer)
2.      Tom yam goong (soup)
3.      Gai tod takrai with yam makeua yo and khau plao (main course)
4.      Khao neow ma muany (dessert)
And around 10 A.M. group 2 started doing and we, group 1 continued our project outside.
Around 2 P.M. resto was opened and group 2 started to served the courses. Group 1 back to kitchen and started prepare for tomorrow’s menu, rotation menu II.3 (Indonesia), which are :
1.      Jalangkote (appetizer)
2.      Sosok utan (soup)
3.      Konro bakar with nasi putih (main course)
4.      Pisang ijo (dessert)
We oneline and supervisors split the team to handle the courses from appetizer to dessert and my team handled the main course, konro bakar with nasi putih. First, my friend cut the meat in butcher, while waiting for the meat I made the spice paste. The spice paste made from shallots, garlic, black nut, galangal, ginger, lemongrass, and roasted coriander that were grinded in food processor until very fine.


After that, the meat was ready and we simmer it together with spice paste until reduce. While waiting for the konro bakar to reduce we made the bumbu kacang and acar. We fried the peanut for bumbu kacang and then grinded it together with saute chili, garlic, shallot, and bird’s eye chili.


For acar, we were just cut the vegetables (cucumber and carrot) and we’ll toss it tomorrow with other ingredients. 



After that, we cover bumbu kacang and acar with wrap in a bowl.
After we finished preparing, we started general cleaning from 4 P.M. until 5 P.M. Finished general cleaning we took a break for awhile. While taking a break the konro bakar has reduced so we put the konro bakar in a food insert and cover it with wrap, and tomorrow it will be grilled and served.


6 P.M. we oneline, Mr. Jaya evaluated for today and after that we pray and we may go home.
