Daily Report : Menu Rotasi II.2 (English Ver.)


April 30th 2018
Today, as usual we started at 8 A.M. But, today there were no supervisors cause senior were busy preparing for guests from tourism ministry. So, we oneline in cold kitchen then not long after that Mr. Wawan came in and he have few things he had to tell us about the incident that happened to us last Friday when we were in Toraja. What happened when we were in toraja was, there were few of my friends who were so emotional seeing that our kapros, Mr. Wawan couldn’t come like the other majors and that our performance was not as great as the other majors. But, for me it was so exaggerate that they cried in front of everyone because I believe Mr. Wawan couldn’t come because he has his reason, it wasn’t like that was his intention not to come with us, and about the performance, well I mean our major is busy enough in kitchen, so why would you worry so much about the performance plus it’s not where we’re good at, what you need to worry about is your food taste good or not.
Okay, move on. After Mr. Wawan finished, Mr. Jaya came in and told us that for today we’ll prepare and cook for rotation menu II.2 or Thailand, which are :
1.      Thai beef salad (appetizer)
2.      Gai tod takrai with yam makeua yo and khau plao (main course)
3.      Khao neow ma muany (dessert)
And for today it was group 1 prepare and doing. My team handled the main course. First, we made the gai tod takrai. Thawing the chicken and while we were waiting we prepare the other ingredients such as, lemongrass, garlic, chili, fish sauce, palm sugar, salt and pepper. After the chicken thawing and cut, we marinated it with cornstarch, flour, eggs, fish sauce, salt and pepper, then fry. 


Then, bake the chicken. Last, marinated with the dressing. The dressing was made of hot water mixed with fish sauce, shallots, garlic, ginger, salt and pepper. Finished with gai tod takrai, I helped my friends who were grilling eggplant for the yam makeua yo.



After all the menu finished, we took a break until 03.30 P.M. After break, we started general cleaning right away. General cleaning done, and since today we didn’t open resto, so we had a lot of anak bangsa. Anak bangsa is like the leftover food for us. After that, we oneline and there were few information from Mr. Ical and then we pray and we may go home.
